Chubby's Best Potato Salad



Yes, this is almost exactly the same recipe as my Chubby's Best Macaroni Salad. I'm not even ashamed to admit that, and after tasting it I think you'll understand why I didn't change the recipe much.


A classic American side for picnics and barbecues. Made with just a few ingredients, it's creamy and flavorful with just a bit of crunch from the veggies. Best of all, it can be made the night before and just pulled out of the fridge when the burgers come off the grill.


Ingredients

-For the dressing-

18 oz Duke's Mayonnaise

3 Tbsp Sugar

1 tsp celery seed

½ tsp garlic salt

2 tsp apple cider vinegar

3 Tbps dill pickle relish

3 Tbsp yellow mustard


-For the Salad-

2 lb Yukon Gold potatoes

3 hard boiled eggs (peeled and chopped)

¾ c diced red onion

½ c diced red bell pepper

½ c celery


Directions

In a small mixing bowl, combine dressing ingredients and mix until sugar is dissolved and celery seed and relish bits are dispersed throughout the dressing. Set bowl in refrigerator while assembling the rest of the salad.


Quarter Yukon Gold potatoes and boil about 10 minutes until fork tender. You want soft not mushy. We're leaving the potatoes in bigger chunks and dicing them after cooking to help keep a good texture.


Drain potatoes and rinse in cold water to stop the cooking process. After potatoes are cooled the skins should peel right off. (Don't worry if little bits stay stuck to the potato, like red potatoes, Yukon Golds have a skin that's thin enough it won't greatly affect the finished salad). Dice potatoes once peeled (I like about ½"-¾" cubes).

While potatoes are cooking, peel and chop eggs. Chop celery, onion, and pepper.

In a large mixing bowl combine the drained, cold potatoes with the chopped eggs, veggies, and about ⅔ of the dressing. Stir gently until well coated, using the remaining dressing if needed. (Don't worry about the leftover dressing, it'll keep for a few days in the fridge and it's delicious on burgers, fries, and as a salad dressing. You won't have trouble finding a use for it. )

Store covered in refrigerator at least one hour but preferably overnight. Keep cold and use within 4 days.



Tips/Add-Ins

You could absolutely use sweet relish instead of dill or Miracle Whip instead of mayo, but I don't recommend it, because Duke's mayonnaise is delicious and the dill relish gives a nice tangy bite. Seriously, Duke's is the best Mayonnaise I've ever had. They aren't paying me to say this, but if they made a sponsorship offer, I'd definitely be interested...
