Chicken Noodle Casserole




Chicken Noodle Casserole. Classic comfort food, cheap eats, and a good way to use up leftover chicken. Change it up by using different "Cream of..." soups, add veggies, switch up the toppings, and you've got a very versatile meal.


This is my wife's family's recipe, and they use Cream of Chicken soup with Lay's regular chips on top, no vegetables. I personally prefer it with 1 can each Cream of Chicken and Cream of Mushroom, add peas and carrots, topped with Ritz cracker crumbs.


Ingredients

8oz Egg noodles

4 cans or 2 cartons chicken broth

1½-2c cooked or canned chicken

2 cans Condensed Cream of Chicken soup (or other condensed cream soup)

2c Crushed Potato Chips (or crushed Ritz crackers, French Fried Onions, or Cheddar Cheese

1c frozen vegetables, optional


Directions

Cook NOODLES according to package directions, using BROTH instead of water.



Drain noodles, saving broth if desired to use in another dish.


Combine cooked, drained NOODLES, SOUPS, CHICKEN, PEAS & CARROTS (optional) and SALT & PEPPER to taste and pour into a greased 13x9 baking dish. (If I include the peas and carrots, my kids won't eat it, so just imagine these 🟢🟧🟢🟧🟢🟧 mixed into the pictures below 😉)



Top with your choice of crushed CHIPS, CRACKERS, FRENCH FRIED ONION, or CHEESE. For picky families, top the casserole in sections so nobody has to complain.



Bake in 350° oven 30 minutes.



Tips/Add-Ins


Replace the cooked chicken with other meats. Cooked turkey, crumbled hamburger, or shredded pork are all great choices.


Swap out the condensed Cream of Chicken soup and use Cream of Mushroom, Cream of Celery, or Cheddar Cheese soup instead. Campbell's also has some harder-to-find soups that not every store carries that would awesome here, including Cream of Chicken with Herbs, Cream of Mushroom with Roasted Garlic, or Cream of Shrimp.


Swap out the cooked pasta with cooked rice. Stir in a cup each of shredded cheese and salsa.


Swap out the cooked pasta with raw sliced potato and increase the bake time to an hour, adding toppings in the last 20 minutes.


Make it extra creamy by adding 8oz of Sour Cream or Cream Cheese.
